The Fluffiest Keto Maple Flavored Pancakes – 1 Net Carb!

Inspired by those super fluffy Japanese pancakes, I decided to try a similar technique and it works!!  They are fluffy, soft, sweet pillows of deliciousness. These don’t even need syrup since I literally put the flavor into the batter but melted butter is always recommended 🙂

Ingredients

  • 2 eggs, room temperature
  • 1 pinch salt
  • 1/2 tsp baking powder
  • 2 tbsp low carb sweetener (I use this)
  • 1/4 tsp maple flavor (I use this)
  • 1/4 tsp vanilla extract (I use this)
  • 3 tbsp heavy whipping cream
  • 1/2 cup superfine almond flour (I use this)
  • Ghee spray (I use this)

Tools

  • 2 mixing bowls
  • Hand mixer with regular and balloon whisks (I use this)
  • Rubber spatula
  • Measuring cups and spoons
  • Omelette pan
  • Spatula

Instructions

  1. Separate your eggs – whites in one bowl and yolks in the other
  2. In the yolk bowl, add your maple flavor, vanilla, cream, and almond flour and mix with your hand mixer with the regular whisk attachments until combined
  3. Replace the regular whisks with the balloon whisk attachment and whisk the egg whites, baking powder, salt, and sugar on high until medium peaks form
  4. With your rubber spatula, add a small amount of eggs whites to the yolk mixture and fold until combined.  Then pour the yolk mixture into the egg whites and fold until combined – it’s the air that makes these fluffy so definitely use a rubber spatula here and take your time
  5. Heat an omelette pan on the stove over medium low heat dry for at least a minute.  Spray lightly with the ghee and drop 1/4 cup full of batter into the pan.  These take a little longer to cook so allow the pancake to cook for about 2 minutes until a gentle shake of the pan has the whole pancake shift.  Turn it over and cook on the other side for another 1 minute and 30 seconds until golden brown.  Set aside and repeat.  The batter makes about 8 pancakes.
  6. Serve warm (with pats of butter.. yum!)
