Simple, easy, delicious — throw the ingredients together and then eat it with a spoon… At 3 net carbs and 338 calories, that’s my kinda breakfast.
Ingredients:
- 1 large, Egg
- 1.50 Tbsp, Unsalted Butter (I use this)
- 0.50 tsp, Baking Powder (I use this)
- 3 tbsp(s), Almond flour (I use this)
- Pinch, Kosher Salt (I use this)
- 0.5 tsp(s), Cinnamon (I use this)
- 0.25 tsp(s), Vanilla Extract (I use this)
- 1 tbsp(s), Erythritol (I use this)
- Optional: 1 tbsp(s), Low Carb Maple Syrup (I use this)
Tools:
- Mug or Ramekin (I use this)
Instructions:
- Place butter in your ramekin and melt it in the microwave about 30 seconds.
- Adding the egg last, combine all ingredients (except syrup) in your ramekin until well mixed – I use a fork or small whisk for this.
- Microwave on high for 1 minute.
- Top with optional syrup and dig in!

I was planning to make my go to egg/cream cheese pancakes tonight when I realized I was out of cream cheese. I did a quick search for pancakes w/o cream cheese and came across this recipe. I will never make the other pancakes again! This was so good!

wow!! I made this because i was having a hankering for something cakey but still wanted to stay on diet… I substituted the almond flour for one heaping tablespoon of cocnut flour and doubled the butter out of necessity but GREAT recipe!!!

Can you do this in the oven or air fryer? And what temp?
You should be able to do it in the oven. You’d have to play around with the temperature and length of time – I’d start with 350 for 20-25 minutes.
What can I sub for the almond flour… I’m allergic
I’m sorry, I only use almond flour in my recipes. You can try experimenting with a different flour substitute but it will be a bit of trial and error to get the right consistency.
